History and scholarship

Classic works that framed cooking as a skilled trade include Brillat-Savarin's Physiologie du goût (1825) and Escoffier's Le Guide culinaire (1903), which codified the kitchen brigade. Sociologist Gary Alan Fine (1996) studied restaurant kitchens ethnographically, and Harold McGee (2004) explained cooking through chemistry and physics. Pettid (2008) and Kim et al. (2016, Journal of Ethnic Foods) describe Korean cuisine's fermented, side-dish-centred structure. In Korea the licence sits within the National Technical Qualification system and can be read, following Spence (1973), as a signal of skill.

Getting it

It is generally described as a computer-based written test (food hygiene, cooking theory) plus a hands-on practical drawn from a published task list. Hygiene and safety weigh heavily, and tasks and scoring may change. Requirements, subjects, credit and practicum rules, pass criteria and dates can change; always check the administering body's notice and current law.

Work and careers

Holders work in institutional catering, Korean restaurants, hotel kitchens and school kitchen posts (education support staff), often alongside dietitians. Many add other cooking licences, the bartender licence or barista certificates.

FAQ

Can I self-study?
Many self-study the written part, but the practical needs repeated practice.
Is it the same as a cook's licence?
A separate licensing step may apply; check current law.
